Make a restaurant quality New York strip steak at home using a sous vide machine. Gavin and Karen from Couple in the Kitchen show us how to sous vide a strip steak to a perfect medium rare using a sous vide cooker set at 130 degrees F for two hours.
First, season an Omaha Steaks New York strip steak with steak seasoning, butter, and fresh herbs and place in plastic bag. Use the water displacement method to remove air without getting water in the bag. Then, gently zip it closed to seal. The bag should stay towards the bottom of the container and not float to the top.
Sous vide for two hours at 130 degress F for medium-rare doneness. Remove from sous vide and let the steak rest for 15 minutes. Remove from bag and prep for searing by wiping excess liquid from steak. Heat grapeseed oil to medium-high heat in a skillet and sear your New York strip about a minute on each side to create a nice brown exterior. Let steak rest for 5 minutes, season with salt and pepper, slice and enjoy!
