Start with a high-quality prime rib – bone-in beef roast is their preference. Season a day ahead of time with a coarse rub and leave uncovered in the fridge for 12-24 hours. Before smoking, sear each side of the roast on the stove for a nice crust. Your prime rib is now ready for the pre-heated smoker. Smoke at 225 degrees F for approximately 2 hours or until meat is 125 degrees. Let rest and enjoy.
